Recipe: Salatat Banadura - Tomato Salad

Serves about 4

4 medium ripe but firm tomatoes, diced into 1/2 inch cubes
1/2 cup finely chopped fresh coriander leaves
1 clove garlic, crushed
3 tablespoons olive oil
3 tablespoons lemon juice
1/2 teaspoon salt
1/4 teaspoon pepper
pinch cayenne

Place tomatoes in a salad bowl and set aside. In a small bowl combine remaining ingredients. Pour over tomatoes, then toss just before serving.
