Recipe: Tahini-egg Salad

4 tablespoons tahini (sesame seed paste found in health stores)
4 tablespoons lemon juice
2 cloves garlic, crushed
1 teaspoon salt
1/2 teaspoon pepper
3 tablespoons water
6 hard-boiled eggs, finely chopped
4 tablespoons finely chopped parsley
1/4 teaspoon cumin

Place tahini, lemon juice, garlic, salt, pepper and water in a blender, then blend for a minute. Gently mix with eggs and parsley, then spread on a platter. Sprinkle with cumin and serve.
