Recipe: Kalmi - Moong Bean Patties

Serves 4 to 6

1 cup moong beans, soaked overnight and drained
4 tablespoons flour
1 large onion, chopped
2 chillis, finely chopped
2 tablespoons grated fresh ginger
2 teaspoons baking powder
1 teaspoon salt
1 teaspoon ground coriander seeds
1 teaspoon cumin
1 teaspoon turmeric
1/2 teaspoon pepper
1 egg, beaten
oil for frying

Place all ingredients, except oil, in a food processor, then process into a smooth-soft paste.

In a saucepan, add oil to a depth of 1 inch and heat, then drop in heaping tablespoons of the paste and deep fry over medium to golden brown (if patties tend to break, add more flour, or if paste too thick, add water). Drain on paper towels, then serve hot with chutney.
