Serves about 6

2 cups bean sprouts
1-1/2 cups chopped shrimps
1 cup flour
2 eggs, beaten
1/2 cup finely chopped fresh coriander
1/2 cup finely chopped green onions
4 cloves garlic, crushed
1 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon chilli flakes
water
oil

Combine all ingredients, except water and oil in a mixing bowl, then stir in as much water as needed to create a pancake-like batter.

Place oil to about a one-inch depth in a saucepan, then heat. Drop heaping tablespoons of batter in oil then fry over medium heat until fritters become golden brown. Drain on paper towels, then serve warm.
