Even though not truly authentic, this is a fast and easy method of making Turkish delight.

1 cup sugar
1/2 cup water
1 lemon rind, grated
2 tablespoons gelatine, dissolved in 1/2 cup warm water
1 teaspoon rose water
1 teaspoon almond extract
4 tablespoons orange juice
4 tablespoons coarsely ground pistachios
4 tablespoons coarsely ground almonds
icing sugar

Place sugar, water and lemon rind in a saucepan and bring to boil, then stir in gelatine, rose water and almond extract. Cover and simmer over low heat for 12 minutes, then stir in orange juice, pistachios and almonds. Pour into a greased square pan and refrigerate overnight. Cut into 1-inch squares, then dunk into icing sugar and serve or store in a cool place.
