Recipe: Malaysian Chicken Fried Rice - Nasi Goreng

Serves about 6

4 Tbs. cooking oil
227 g (1/2 LB) de-boned chicken, cut into 1/2 inch cubes
1 medium onion, finely chopped
2 cloves garlic, crushed
227 g (1/2 LB) cooked shrimp
1 cup fresh or frozen green peas
1/2 tsp. salt
1/2 tsp. pepper
1/8 tsp. cayenne
2 cups cooked rice
6 eggs
4 Tbs. shredded lettuce leaves
A handful of fresh coriander leaves
1/2 small tomato, quartered and thinly sliced

Heat oil in saucepan and sauté chicken over medium heat for 5 minutes. Add onion and garlic, then sauté for a further 8 minutes. Stir in shrimps, green peas, salt, pepper and cayenne, then stir-fry for another 5 minutes. Stir in rice and stir-fry for a few minutes, then place on a platter.

Fry eggs, then place evenly on top. Garnish with lettuce, coriander leaves and tomato, then serve alone or with peanut sauce.

I would like to say that I made the Nasi Goreng by Habeeb Salloum and it was DELICIOUS!! Each cook has his or her own method for creating or recreating dishes and Mr. Salloum's version is fantastic. Tasty, moist and filling, my guests just loved it. Thank you for this great recipe. I'll be trying more.

As mentioned before there is balacan AKA shrimp paste in the fried rice, it's how it gets its unique flavour.
