Recipe: Yogurt and Cucumber - Jajeek

This is a simple appetizer; common in the Middle East, in Iraq it is usually served as an appetizer.

2 cups yogurt
1 cucumber, about 6 inches long, finely chopped
2 cloves garlic, crushed
2 tablespoons olive oil
2 tablespoons finely chopped mint
1/2 teaspoon salt
1/4 teaspoon pepper

Thoroughly combine all ingredients, then chill and serve.
