Recipe: Kubani Ka Meetha - Apricots with Whipped Cream

Serves 6

1/2 pound dried apricots, pitted
2 cups boiling water
4 tablespoons ground almonds
4 tablespoons sugar
1/4 teaspoon almond extract
whipped cream

Place apricots and water in a saucepan, then bring to boil and cook over medium/low heat for 30 minutes. Mash apricots with their water, then return to saucepan and stir in almonds. Cook until mixture begins to thicken, then stir in sugar and almond extract and cook for a few minutes. Chill, then serve with whipped cream.
