Recipe: Double Ka Meetha - Bread Pudding

Serves 6 to 8

5 slices regular bread, each slice cut into 4 pieces, then fried golden brown
2 tablespoons lightly toasted chopped cashew nuts
3 tablespoons lightly toasted sliced almonds
1/2 cup sugar
1/4 cup water
1/8 teaspoon ground cardamom
pinch saffron, dissolved in 1 tablespoon water
1/2 cup boiling hot milk
1/2 cup whipping cream

Arrange fried bread pieces in a large baking pan, then sprinkle with cashews and almonds. Set aside.

Place sugar and water in a saucepan and bring to boil, then the cook for 10 minutes over low heat to make a syrup, stirring a number of times. Stir in cardamom and saffron, then cook for a few more minutes. Spoon hot syrup evenly over nuts and bread, then pour milk evenly over top.

Spoon cream over top, then refrigerate for a few hours before serving.
