Recipe: Hyderabadi Mirch Ka Salan - Fried Peppers

Serves about 6

6 tablespoons vegetable oil
2 medium onions, finely chopped
6 large sweet green peppers, cut lengthwise into 1/2 inch wide strips
1 red hot pepper, finely chopped
1 teaspoon mustard seeds
2 tablespoons ground sesame seeds
2 tablespoons unsweetened ground coconut
1 1/2 teaspoons salt
1 teaspoon ground cumin seeds
1 teaspoon pepper
1 cup hot water
2 tablespoons lemon juice

Heat oil in a large frying pan, then fry onions over medium heat for 10 minutes. Add sweet and hot peppers and mustard seeds, then stir- fry for 5 minutes, adding more oil if necessary. Stir in remaining ingredients, except lemon juice, then cover and cook over medium heat for 10 minutes. Stir in lemon juice, then serve hot or cold.
