Recipe: Malaysian Chicken Fried Rice - Nasi Goreng

Serves about 6

4 Tbs. cooking oil
227 g (1/2 LB) de-boned chicken, cut into 1/2 inch cubes
1 medium onion, finely chopped
2 cloves garlic, crushed
227 g (1/2 LB) cooked shrimp
1 cup fresh or frozen green peas
1/2 tsp. salt
1/2 tsp. pepper
1/8 tsp. cayenne
2 cups cooked rice
6 eggs
4 Tbs. shredded lettuce leaves
A handful of fresh coriander leaves
1/2 small tomato, quartered and thinly sliced

Heat oil in saucepan and sauté chicken over medium heat for 5 minutes. Add onion and garlic, then sauté for a further 8 minutes. Stir in shrimps, green peas, salt, pepper and cayenne, then stir-fry for another 5 minutes. Stir in rice and stir-fry for a few minutes, then place on a platter.

Fry eggs, then place evenly on top. Garnish with lettuce, coriander leaves and tomato, then serve alone or with peanut sauce.
