Recipe: Peanut Sauce - Kuak Kacang


4 Tbs. cooking oil
1 medium onion, chopped
6 cloves garlic, chopped
1 hot pepper, chopped
1/2 cup ground peanuts or peanut butter
1 Tbs. tamarind paste
1 Tbs. shrimp paste
1 Tbs. brown sugar
1/4 tsp. salt
1/4 tsp. ground fennel seeds
1/4 tsp. cumin
1/2 cup water

Heat oil in a frying pan, then sauté onion, garlic and hot pepper for 10 minutes over medium heat. Allow to cool.

Transfer frying pan contents to a food processor. Add remaining ingredients than process into a thin paste. Add more water if necessary. Use immediately or store in a tightly covered jar and refrigerate, then use as needed within a week.
